Paleo Pizza



I saw this video on Crossfit Diablo's site. After I thought, "Wow! Is this real?" I realized that I can't be surprised by amount of effort anybody will go through to neglect others health anymore.

It did remind me however of Jeremy talking about making a Paleo version of pizza the other day. I don't know if he figured out a way to replace the common ingredients of Dough or cheese in this concoction, but the thought of a healthy pizza with some flavor to it sounded like a grand idea to me.

If you have any ideas of how to make this work, let me know. I'd love to hear about it.

I've made mini pizzas using sliced eggplant and just ditch the cheese. While it's not exactly the same, they taste fantastic :o) My fave is chicken, pesto (no cheese), and sun dried tomatoes...so good!!! A little heavy on the fat, however, so plan ahead.

Mix about 250grams of ground almonds with a beaten egg and 2 tsp olive oil. Add more almonds if too sticky. Roll onto a non stick baking tray, bake for about 6-8 mins on medium heat. Then add toppings and finish off in oven for a few more minutes.

Very high in fat! So if you aren't eating Paleo or at least fairly low carb, don't eat more than half of this.
